tasty treats-mini oreo cheesecakes

 these mini cheesecakes are delicious!!  my sister found them on just thought I'd share.  while you're here you should spend some extra time and check out her blog!  she has lots of yummy treats and tons of cute crafts!!  i haven't been following her for very long, but i think she has a super cute blog and you should all follow her :)
 ingredients:
42 oreos- 30 need to be left whole and 12 coarsly chopped
2 pounds cream cheese, room temp (4 packs of 8 oz cream cheese)
1 cup sugar
1 teaspoon vanilla extract
4 large eggs 
1 cup sour cream
pinch of salt
cupcake pan
cupcake liners
electric mixer
 first line your cupcake pans with your cupcake liners.  i got these cute red and black ones at IKEA!  aren't they adorable?!?  i think so!  just in case you didn't know... i LOVE IKEA!  its the best!  they have the best food, furniture and chocolate (hazelnut is the best)!!! anyways after you set the liners in the cupcake pans set an Oreo at the bottom of each liner...
 before i forget...preheat your oven to 275!
 with an electric mixer on medium-high speed, beat cream cheese until smooth.  gradually add sugar, and beat until combined, then beat in the vanilla.  then drizzle in eggs a bit at a time and beat in.  then beat in sour cream and salt...
 then you will need to coarsely chop your Oreo s!  the best way i thought to do this was to put them in a plastic bag and smash with a spoon!  its nice and clean and it works really well!
 then stir in the chopped cookies
 divide the batter into cupcake liners until they almost reach the top...this batter doesn't really rise so the amount you put in will pretty much be the amount that you get
then bake for 22 minutes, rotating halfway.  bake until the filling is set.  let cool and refrigerate (in tins) overnight
